Steps

  • Pull the tentacles away from the body and discard the internal quill.
  • Clean the squid body under running water.
  • Remove the ears and peel away the skin from the body.
  • Cut the tentacles below the eye and remove the beak at the base.
  • Slice the squid body into rings.
  • Crush the garlic with sea salt into a fine paste.
  • Finely chop the mint, coriander, and chilli.
  • Sauté the garlic paste and chilli in olive oil until the garlic browns.
  • Add the squid and stir-fry for two minutes.
  • Stir in the chopped mint and coriander.
  • Remove from heat, add lime juice, and serve immediately.
