Pull the tentacles away from the body and discard the internal quill.
Clean the squid body under running water.
Remove the ears and peel away the skin from the body.
Cut the tentacles below the eye and remove the beak at the base.
Slice the squid body into rings.
Crush the garlic with sea salt into a fine paste.
Finely chop the mint, coriander, and chilli.
Sauté the garlic paste and chilli in olive oil until the garlic browns.
Add the squid and stir-fry for two minutes.
Stir in the chopped mint and coriander.
Remove from heat, add lime juice, and serve immediately.
