Steps

  • Light the barbecue thirty minutes before you begin cooking.
  • Mix the brown sugar, ground ginger, and grated nutmeg in a bowl until combined.
  • Make a vertical incision down the curved side of each banana from stalk to base.
  • Sprinkle the sugar mixture under the skin and place two slices of butter into each banana.
  • Squeeze lime juice into the incisions.
  • Close the banana skins and wrap each fruit tightly in aluminium foil.
  • Grill the parcels for 10-12 minutes on ash-white coals, turning occasionally until soft.
  • Discard the foil and serve bananas with whipped cream or vanilla ice cream.
