Method

Combine caster sugar, rosewater, and 1 litre of water in a pan and bring to a boil.

Score a cross in each peach and simmer in the liquid for 5 minutes.

Remove peaches from the pan and peel off the skins.

Return peaches to the pan and simmer for 10 minutes until the syrup reduces by half.

Strain the peaches from the syrup and allow them to cool.

Mix the yoghurt and honey together in a bowl.

Serve the yoghurt with peaches and a drizzle of the remaining syrup.
