Steps

  • Preheat the oven to 200°C.
  • Brush the edges of the pastry with beaten egg and drizzle with half the honey.
  • Fold the pastry edges to the middle and drizzle with the remaining honey.
  • Slice the pastry into 2.5 cm pieces and place them on a baking sheet.
  • Bake for 8 to 10 minutes until golden and puffed.
  • Dust the warm palmiers with icing sugar and place on a plate.
  • Whisk the double cream until soft peaks form.
  • Fold the icing sugar and honey into the whipped cream.
  • Serve the cream in a bowl alongside the palmiers.
