Steps

  • Preheat the oven to 200°C.
  • Season the duck breast with salt and pepper.
  • Fry the duck skin-side down in a hot ovenproof pan for 4 minutes.
  • Flip the breast and roast in the oven for 5 minutes.
  • Drizzle with honey and insert cloves into the skin.
  • Roast for another 5 minutes until cooked through but pink.
  • Rest the meat for 5 minutes, discard cloves, and slice thinly.
  • Fry the couscous in olive oil for 3 minutes.
  • Add stock, chilli, mango, and coriander to the couscous.
  • Season and let sit until the liquid is absorbed.
  • Fluff with a fork and serve the duck sliced over the couscous.
