Steps

  • Line the base of a metal medium-size chef's ring with the sponge fingers cut to size.
  • Mix the Greek yoghurt, mascarpone, and honey together in a bowl.
  • Spread the mixture onto the sponge fingers and smooth the top with a palette knife.
  • Warm the sides of the mould with a blow torch to release the cheesecake and serve.
