Steps

  • Place gammon in a deep pan, cover with water, bring to boil, then drain.
  • Return gammon to pan and cover with half orange juice and half cold water.
  • Add clove-studded onion halves and bay leaves to the pan.
  • Simmer covered for three hours, topping up with hot water as needed.
  • Preheat oven to 180°C.
  • Transfer gammon to a roasting tin, remove skin, score fat, and stud with cloves.
  • Mix glaze ingredients in a bowl and spoon over the gammon.
  • Roast for 45 minutes while basting frequently until golden-brown.
  • Rest meat before carving into thick slices.
