Steps

  • Heat 30ml of olive oil in a large pan.
  • Fry the bacon and red onions until they are coloured.
  • Roughly chop the tomatoes and add them to the pan once the bacon is crisp.
  • Add smoked paprika and star anise, then season with salt and pepper.
  • Pour in 1 litre of water and simmer with a lid on for 30 minutes, stirring occasionally.
  • Add the drained pinto beans and cook for five more minutes.
