Method

Heat a griddle pan until it starts smoking.

Drizzle tortilla strips with olive oil and place them in the pan.

Cook strips for 1 to 2 minutes per side until they are crisp.

Blend the avocado, chilli, lime juice, and yoghurt in a food processor until smooth.

Transfer the guacamole to a bowl and garnish with a parsley sprig.
