Steps

  • Halve and stone the plums and place them hollow side up in a heatproof dish.
  • Break the meringues and sprinkle them over the fruit ensuring they fill the hollows.
  • Place dollops of mascarpone cheese over the meringues and fruit.
  • Sprinkle the sugar over the dish and place it in the oven.
  • Bake for 20 minutes until the fruit is tender and the crust is crisp.
  • Serve the dish while it is still warm.
