Steps

  • Mash the avocado with lemon juice and 15ml of soured cream and season.
  • Heat the refried beans with the chopped sausage and BBQ flavoring.
  • Brush two tortillas with oil and mark crossways on a hot griddle pan.
  • Spread beans and cheese on one tortilla and avocado mixture on the other then press together.
  • Bake in a preheated oven at 200°C for 5 minutes until the cheese melts.
  • Cool slightly and cut into triangular wedges from the center.
  • Garnish with cherry tomatoes, a dollop of soured cream, and coriander sprigs.
  • Serve the quesadillas immediately on slates or tiles.
