Steps

  • Heat the oil in a large pan and fry onions for 4-5 minutes until golden brown.
  • Add spices, garlic, chilli, fresh coconut, and coconut milk to the pan.
  • Bring to a boil then add tamarind paste and simmer for 3-4 minutes.
  • Stir in lobster meat and cook until warmed through.
  • Sprinkle with coriander and season with salt and pepper before serving.
