Steps

  • Preheat the oven to 180°C.
  • Wash, dry, and quarter the cherries, then mix with the sultanas.
  • Cream the butter and sugar until pale and light, then beat in eggs one by one.
  • Add mashed bananas to the mixture and fold in sifted rice flour, cornflour, baking powder, and salt.
  • Stir in the fruit and pour into a lined loaf tin.
  • Bake for 75 to 90 minutes until a skewer comes out clean.
  • Cool the loaf on a wire rack before slicing into eight pieces.
