Combine water, lemon juice, salt, coriander seeds, thyme, and bay leaf in a pan.
Break off the artichoke stalks and remove woody parts.
Trim the base, remove rough outer leaves, and cut off the top 3cm of leaves.
Peel the artichokes with a small knife to remove all green leaf parts.
Rub the artichokes with lemon and place them in the pan.
Bring to a boil and simmer for 6 to 8 minutes.
Remove from heat and let the artichokes cool while submerged in the liquid.
Remove the inner chokes carefully using a spoon before serving.
