Steps

  • Place sweet potato in cold salted water and bring to a boil.
  • Simmer potatoes for ten minutes.
  • Fry onion and garlic in oil for 3-5 minutes until softened.
  • Add Brussels sprouts and stir fry for three minutes.
  • Strain cooked potatoes and mash with butter and seasoning.
  • Mix onion and sprouts into the mash and keep warm.
  • Heat a griddle pan and brush steaks with mustard and honey.
  • Griddle steaks for 2-3 minutes on each side.
  • Transfer to the oven for three minutes to finish.
  • Serve the bubble and squeak topped with the glazed gammon.
