Steps

  • Heat the oil and 25g of butter in a frying pan.
  • Fry the onion and garlic until softened but not coloured.
  • Add 100g of peas and 200ml of stock and bring to a simmer.
  • Cook until the peas are tender for about 5 to 8 minutes.
  • Remove from heat and stir in the fresh mint.
  • Blend until smooth using a hand blender.
  • Serve in a bowl with a drizzle of olive oil.
