Steps

  • Preheat the oven to 200°C.
  • Line a baking tray with parchment and brush with oil.
  • Place the 200g haddock fillet onto the tray.
  • Spread ketchup over the fish and top with chopped olives, mushrooms, parsley, and sweetcorn.
  • Mix the 25g grated cheddar with the breadcrumbs and black pepper in a bowl.
  • Cover the fish layer evenly with the cheese and breadcrumb mixture.
  • Bake the fish for 18 to 20 minutes until golden-brown and cooked through.
  • Serve the fish hot with steamed green vegetables.
