Steps

  • Pour the custard into a large bowl.
  • Mix the brioche into the custard until coated.
  • Melt 25g of butter in a pan and cook brioche for two minutes per side until golden.
  • Melt 50g of butter and the sugar together in a separate pan over medium heat.
  • Stir in the apples and sultanas to coat and caramelise.
  • Add lemon juice and rum then carefully ignite the rum to flambé for a few seconds.
  • Place the bread on a warm plate and garnish with the fruit mixture.
