Steps

  • Preheat oven to 200°C.
  • Rub the butter into the flour then mix in almonds, caster sugar, orange rind, and salt.
  • Add the egg yolk and water to form a soft dough then chill for 30 minutes in a bag.
  • Roll pastry to 3mm thickness and cut 18 rounds using a 7.5cm cutter.
  • Place rounds into greased tins and fill with mincemeat.
  • Cut festive lids from remaining pastry and place on top.
  • Brush tops with beaten egg and bake for 12 to 15 minutes.
  • Cool for a few minutes in the tin before transferring to a wire rack.
  • Dust the finished pies with icing sugar.
