Steps

  • Preheat the oven to 170°C and grease a 20cm square tin.
  • Mix the flour, sugar, oats, and coconut together in a large mixing bowl.
  • Melt the butter and golden syrup in a small pan over gentle heat.
  • Dissolve the bicarbonate of soda in boiling water and stir it into the butter mixture.
  • Pour the liquid into the dry ingredients and combine well.
  • Press the mixture into the tin and bake for 20 minutes until golden-brown.
  • Cool slightly before cutting into slices or individual cookies.
