Steps

  • Preheat the oven to 200°C.
  • Fry onions in oiled wok until soft, then brown the ginger and beef.
  • Simmer curry powder, soy sauce, water, sugar, salt, potatoes, and peas for ten minutes until reduced.
  • Stir in coriander and allow the filling mixture to cool.
  • Roll out pastry and cut into 10cm rounds.
  • Place 15ml of filling on each round and fold into a half circle.
  • Seal the pastry edges with fingertips or a fork.
  • Brush pastry with egg and bake for 20 minutes until golden.
