Steps

  • Heat the vegetable oil in a deep heavy-bottomed saucepan until very hot.
  • Whisk the cinnamon and caster sugar together in a small bowl.

  • Remove the strips with a slotted spoon and drain on kitchen paper.
  • Sprinkle the hot tortillas with the cinnamon sugar mixture.
