Steps

  • Pulse flour and butter in a food processor until the mixture resembles breadcrumbs.
  • Add egg yolk, sugar, and water, then pulse until a firm dough forms.
  • Knead the dough lightly on a floured surface, wrap in film, and chill for 30 minutes.
  • Preheat your oven to 180°C.
  • Roll out the pastry and line a 25cm flan tin, pricking the base with a fork.
  • Gently heat golden syrup in a pan until runny, then stir in breadcrumbs and lemon zest.
  • Mix the beaten eggs into the syrup mixture.
  • Pour filling into the case, decorate with pastry strips, and bake for 45 to 50 minutes until set.
