Steps

  • Soak the sultanas in 50ml of cider until plump.
  • Preheat the oven to 180°C.
  • Grease an 18cm baking tin and dust with flour.
  • Mix butter and brown sugar together in a bowl.
  • Add eggs, flours, baking powder, coriander, and salt to the mixture.
  • Stir in apple cubes, soaked sultanas with their liquid, and the remaining 100ml of cider.
  • Pour batter into the tin and bake for 20-25 minutes.
  • Boil 100ml cider and granulated sugar in a saucepan until dissolved, then cool.
  • Prick the cooled cake all over and pour the cider syrup over the top.
