Method

Soak the sultanas in 50ml of cider until plump.

Preheat the oven to 180°C.

Grease an 18cm baking tin and dust with flour.

Mix butter and brown sugar together in a bowl.

Add eggs, flours, baking powder, coriander, and salt to the mixture.

Stir in apple cubes, soaked sultanas with their liquid, and the remaining 100ml of cider.

Pour batter into the tin and bake for 20-25 minutes.

Boil 100ml cider and granulated sugar in a saucepan until dissolved, then cool.

Prick the cooled cake all over and pour the cider syrup over the top.
