Steps

  • Soak the raisins in rum for at least 30 minutes.
  • Soften gelatine sheets in cold water then drain and squeeze out excess moisture.
  • Heat cream, sugar, and spices in a pan until boiling.
  • Simmer for 3 minutes while whisking until sugar dissolves.
  • Whisk in softened gelatine and stir in drained raisins.
  • Pour mixture into 200ml moulds and cool completely.
  • Chill in the fridge for at least two hours until set.
  • Loosen moulds in hot water and turn out onto plates.
  • Garnish with redcurrants before serving.
