Steps

  • Place couscous in a bowl and cover with boiling water by 2 cm.
  • Whisk lemon juice, orange juice, and olive oil, then season with salt and pepper.
  • Pour the dressing over the couscous and let soak for 10 minutes.
  • Peel and chunk the remaining orange, removing the skin and pith.
  • Gently mix the orange chunks, chicken, and herbs into the couscous.
  • Top two plates of pea shoots with the prepared chicken couscous salad.
