Steps

  • Season the chicken slices with salt and pepper.
  • Place one chicken slice diagonally across a spring roll wrapper.
  • Layer six prawns, chilli strips, and a handful of coriander over the chicken.
  • Cover the filling with a second slice of chicken.
  • Fold the pastry ends inward and roll into an envelope shape.
  • Secure the roll with a cocktail stick.
  • Deep-fry the rolls in hot oil for 2 to 3 minutes until golden brown.
  • Drain the rolls on absorbent kitchen towels.
  • Remove the cocktail sticks before serving.
