Trimmed and cut into 3cm pieces

Peeled and cut into thin matchsticks
Method

Toast the five-spice powder in a pan over low heat until aromatic.

Add the rice and salt to the pan and cook according to package instructions.

Dry-toast cashew nuts in a wok over medium heat until golden brown.

Transfer nuts to a plate and set aside.

Heat oil in the wok on high and stir-fry seasoned chicken for 5 minutes.

Add peppers, onions, chillies, and ginger, cooking for 3 minutes.

Stir in the garlic and cook for one additional minute.

Mix cornflour with 10ml cold water to form a smooth paste.

Add paste, stock, and hoisin sauce to the wok and simmer until thickened.

Fold in the toasted cashews and check that the chicken is cooked through.

Drain the rice and season with salt and pepper.

Serve the stir fry over the rice and garnish with torn basil leaves.
