Steps

  • Preheat the oven to 200°C.
  • Place the pastry on a baking sheet and prick it thoroughly with a fork.
  • Bake the pastry for five minutes.
  • Brush the pastry with beaten egg and sprinkle with caster sugar.
  • Bake for another 6-7 minutes until golden-brown.
  • Dust the hot pastry with icing sugar and cut into long straws.
  • Simmer the rhubarb, butter, sugar, and vinegar in a pan for 6-8 minutes.
  • Serve the pastry straws alongside the cooled rhubarb ketchup.
