Steps

  • Preheat the oven to 200°C.
  • Boil the whole sweet potatoes in a pot for 20 to 25 minutes until tender.
  • Peel and slice the cooked potatoes into thick rounds and place in an oven-proof dish.
  • Boil the butter, brown sugar, cinnamon, vanilla, and orange juice in a saucepan to make a sauce.
  • Pour the sauce over the potatoes and bake for 10 minutes.
  • Top with marshmallows and return to the oven until just melted.
