Steps

  • Melt the butter and olive oil in a frying pan over medium heat.
  • Fry the butternut squash for 6-8 minutes until golden-brown.
  • Combine the herbs, cooked squash, and a dash of olive oil in a large bowl.
  • Fry the serrano ham in the same pan for 3-4 minutes until crisp.
  • Gently warm the broad beans, vinegar, olive oil, and mint in a saucepan for 2-3 minutes.
