Steps

  • Heat the olive oil in a saucepan and fry the chopped garlic for 1 to 2 minutes.
  • Pour 250ml of stock into the pan and add the broccoli florets.
  • Bring the mixture to a boil and simmer gently for 10 to 12 minutes until tender.
  • Season with salt and pepper then blend in a liquidizer until smooth.
  • Ladle into bowls and garnish with a drizzle of cream.
