Steps

  • Preheat the oven to 230°C.
  • Fry the onion and thyme in olive oil for 3 minutes until golden.
  • Mix the beef, mustard powder, stock, onion mixture, salt, and pepper in a bowl.
  • Roll the pastry to 5mm thick and cut into four 15cm diameter circles.
  • Place meat in the center, brush edges with egg, fold, and crimp to seal.
  • Brush the pastry tops with egg and season with salt and pepper.
  • Place on a greased tray and bake at 230°C for 15 minutes.
  • Reduce heat to 180°C and bake for 45 minutes until golden brown.
