Steps

  • Heat oil in a saucepan over medium heat.
  • Sauté sliced garlic and shallot for 2 to 3 minutes until softened.
  • Add chopped bacon and fry for 3 to 4 minutes until golden.
  • Stir in shredded red cabbage and cook for 5 minutes.
  • Add wine, vinegar, and sugar, then boil and simmer until liquid reduces by three quarters.
  • Pour in 100ml of vegetable stock and simmer for 5 minutes until cabbage is tender.
  • Season with salt and pepper and serve in a warm bowl.
