Steps

  • Mix the olive oil, white wine vinegar, garlic, and parsley in a bowl.
  • Season to taste with salt and pepper.
  • Add langoustines and reserved shells to the marinade and chill for 1 hour.
  • Soak 12 wooden skewers in water for 30 minutes.
  • Thread three langoustines onto each skewer.
