Steps

  • Combine all marinade ingredients in a large bowl and immerse the lamb ribs.
  • Cover and marinate in the fridge overnight or for at least one hour.
  • Preheat the oven to 180°C.
  • Baste the ribs with marinade and cover tightly with aluminium foil.
  • Precook the ribs in the oven for 20 to 30 minutes.
  • Prepare a barbecue to a medium-low heat with grey, ashen coals.
  • Place ribs on the barbecue and cook for 40 minutes before turning.
  • Cook for 10 more minutes until the texture is developed.
  • Place under a preheated grill for 5 minutes if a crisper finish is desired.
