Method

Preheat the oven to 200°C.

Place a filo sheet on a baking sheet and brush with melted butter.

Layer a second sheet on top and brush with more butter.

Sprinkle half of the sugar, ginger, orange, and fig over the pastry.

Add two more buttered sheets and sprinkle with remaining sugar and fruit.

Top with the final two buttered pastry sheets.

Bake for ten minutes until golden-brown.

Simmer cream, brown sugar, and butter in a saucepan for five minutes.
