Steps

  • Top and tail the gooseberries and place them in a jar.
  • Place the jar in boiling water and boil until the fruit is soft enough to pulp.
  • Rub the gooseberries through a coarse sieve to create a pulp.
  • Whisk in the eggs, butter, breadcrumbs, and sugar.
  • Line the edge of a pie dish with a border of puff pastry.
  • Pour the mixture into the dish and bake for 40 minutes.
  • Sprinkle with sifted sugar and serve warm.
