Steps

  • Mix the aubergine cubes with olive oil, salt, and pepper.
  • Cook the aubergine on a griddle pan over medium heat until tender.
  • Thread aubergine onto skewers and brush with melted butter.
  • Stir-fry peanuts in a wok until golden, cool, and blend until smooth.
  • Fry shallots and garlic briefly, then stir in spices, sugar, soy sauce, and water.
  • Simmer sauce with blended peanuts for 10 minutes until thickened.
  • Season with salt and lemon juice, then drizzle sauce over kebabs.
