Steps

  • Finely slice the lemongrass and spring onions.
  • Seed and chop the chilli, then peel and grate the ginger.
  • Squeeze the lime juice into a bowl and stir in the fish sauce and sugar.
  • Heat the vegetable oil in a wok and briefly stir-fry the lemongrass, onions, chilli, and ginger.
  • Add the lime juice mixture, coriander, and basil to the wok.
  • Grill the mackerel fillets skin-side down until the flesh is opaque.
  • Spoon the aromatic topping onto the fish and grill for 5 more minutes until browned.
  • Serve the mackerel immediately.
