Steps

  • Preheat the oven to 220°C.
  • Melt butter, sugar, and rosemary in a saucepan until golden brown.
  • Add the apple slices and cook for five minutes until softened.
  • Mash the apple mixture into a smooth purée.
  • Place the puff pastry on a baking sheet lined with parchment paper.
  • Spread the purée on the pastry, drizzle with honey, and bake for 8-10 minutes.
  • Melt sugar and butter in a clean pan and stir in the cream.
  • Boil the sauce until thickened and pour over the baked tart.
  • Garnish the dish with a sprig of fresh mint.
