Steps

  • Simmer apples, vanilla, butter, cinnamon, sugar, and water in a pan until puréed.
  • Stir the sultanas into the apple purée and set aside.
  • Roll out the puff pastry and cut into two 10cm wide diamond shapes.
  • Score the edges of the diamonds and fold the corners back to create a border.
  • Brush pastry with egg wash, sprinkle with sugar, and bake at 180°C until golden brown.
  • Slice pastries in half, fill with apple purée, replace lids, and serve with clotted cream.
