Steps

  • Crush unpeeled garlic cloves on a board with a knife blade.
  • Peel garlic and mash with salt into a smooth paste.
  • Mix the garlic paste with an egg yolk in a bowl.
  • Whisk in 175ml olive oil slowly until thick.
  • Sift flour, baking powder, and salt into a bowl and make a well.
  • Whisk in 300ml water and wine to form a thick cream batter.
  • Fold in prawns, spring onions, and parsley.
  • Heat 5mm of olive oil in a pan until hot.
  • Fry large spoonfuls of batter 2-3 at a time until golden brown.
  • Drain fritters on kitchen paper and serve hot.
