Steps

  • Heat oil in a wide non-stick pan over medium-high heat and add the diced potatoes.
  • Sauté the potatoes until nearly cooked, then add turmeric, chilli powder, and salt.
  • Fry the mixture until the potatoes are completely cooked through.
  • In a separate pan, heat 5ml of oil until it begins to smoke.
  • Add 2 teaspoons of the spice mix to the hot oil and allow the seeds to crackle.
  • Stir in the green chillies and coriander for a few seconds.
  • Pour the hot spiced oil mixture over the cooked potatoes and serve immediately.
