Steps

  • Mix all marinade ingredients together in a bowl.
  • Slice each chicken breast into five strips and stir into the marinade.
  • Marinate the chicken for at least one hour or longer if possible.
  • Thread the marinated chicken strips onto wooden skewers.
  • Heat a large griddle pan until hot.
  • Cook skewers for three minutes on each side until browned and cooked through.
  • Combine cherry tomatoes, vinegar, sugar, and chilli flakes in a saucepan.
  • Bring to a boil, then reduce heat and simmer for up to one hour until thickened.
  • Cool the tomato jam and serve with the hot chicken skewers.
