Steps

  • Crumble the Stilton into a bowl and mix with the walnuts and sultanas.
  • Preheat the oven to 180°C and line a baking tray with parchment paper.
  • Combine the white flour, wholemeal flour, bicarbonate of soda, and salt in a bowl before adding the cheese mixture.
  • Pour in the buttermilk and mix into a soft dough.
  • Shape the dough into a ball on a floured surface, cut deep slits to mark quarters, and dust with flour.
  • Bake on the tray for 30 minutes until golden-brown and hollow-sounding when tapped.
  • Transfer the bread to a wire rack to cool.
