Steps

  • Whisk the cream with an electric whisk until soft peaks form.
  • Whisk in the yoghurt, vanilla seeds, and icing sugar.
  • Spread orange slices on a tray and dredge with icing sugar.
  • Caramelise the sugar using a mini-blowtorch until golden-brown.
  • Place an orange slice in the base of two glasses.
  • Spoon the vanilla cream over the orange and top with remaining slices.
  • Garnish with mint sprigs and a dusting of icing sugar.
