Steps

  • Cut unpeeled potatoes into 1cm thick slices and then into 1cm chips using a tea towel to dry them.
  • Place chips and cold oil into a wide heavy-based pan and bring to a boil over high heat.
  • Cook the fries without stirring for 15 minutes, maintaining an oil temperature between 150°C and 160°C.
  • Gently stir the chips, add unpeeled garlic cloves, and cook for another 5 to 10 minutes until tender.
  • Toss in the herbs when the chips are pale gold, fry for one minute, then drain on kitchen paper and season with salt.
