Steps

  • Mix tofu, spring onions, carrots, courgette, flour, thyme, and seasoning by hand into a soft dough.
  • Shape the dough into 12 flattened patties and shallow-fry for 5 minutes per side.
  • Place croquettes in an oven-proof dish for reheating or cool them completely for freezing.
  • Combine sugar, cranberries, and orange juice in a pan and cook gently for 10-15 minutes until thickened.
