Method

Sift 115g of flour into a large bowl and add salt and pepper.

Crack the eggs into a well in the flour and gradually beat in 300ml of milk.

Strain the batter through a sieve, stir in thyme, and let rest for 30 minutes.

Preheat your oven to 200°C.

Brown the sausages in a pan until golden and brush them with mustard.

Heat 30g of fat in an ovenproof dish for five minutes until very hot.

Add sausages to the dish, pour in batter, and bake for 35 minutes at 200°C.

Serve the dish seasoned with pepper and topped with butter.
